The feeling cannot be described by words since the clay used for these pots brings unique flavor for the dishes, it keeps their taste and it seems that we are transported centuries in the past when our ancestors lived. Clay is a natural and noble material which was used for preparation and storage of food even in ancient times. Depending on the type of pot we have use of different clay mixes. Some types of clay are more heat resistant and we can make small pots which can be put in the oven. There are other more elastic types of clay and so on. Due to the dissolved salts some clays have medicinal and even good absorption characteristics. All clay pots in which food can be prepared should be placed in a cold oven and then heated. Cooking with these pots does not require a lot of oil and food does not stick to the bottom. The heat is distributed evenly and it will stay for longer periods of time. A potter we know remembered the following legend which his father told him: “Once upon a time a young man lived called Spiridon. He wanted to find some clay and make some object. He looked around river banks and around wild briars (since usually whenever there are wild briars we also have clay). He found several types of clay and started to puddle it and model it but the clay failed to become smoother. Spiridon stood on his potter wheel and started spinning it but something was wrong – his hands kept sticking to the clay and it couldn’t be formed properly. Spiridon was frustrated and started crying, so a tear rolled and the ball of clay started sliding. This reminded the young man that he had to use some water. Thus he made his first small pot. He dried it and baked it. Spiridon became a craftsman know for his “hands of gold”. People started honoring him and called him Saint Spiridon. This saint is in the hearts and souls of potters even today.
